Overview

Food storage is about both safety and quality. Refrigeration slows the growth of many microorganisms but does not stop all deterioration, and freezing greatly slows change without sterilizing food. Storage time varies by food and preparation method, so general habits such as prompt refrigeration, clean containers, separation of raw animal foods, and visible dating work best alongside current food-specific guidance.

Control time, temperature, and contamination

Keep the refrigerator at a safe temperature, refrigerate perishable foods promptly, and store raw meat, poultry, seafood, and eggs so their juices cannot contaminate ready-to-eat food. Clean containers, covered storage, and a consistent leftover-labeling routine make it easier to know what should be used first.

Use food-specific storage times

Different foods have different refrigerator and freezer guidance, so a single universal number is not reliable. Consult current storage charts for the actual food, and discard food when safety is uncertain rather than using smell, taste, or appearance as the only test for harmful microorganisms.
